Vintage Description

This yuzushu opens with a bright citrus bouquet dominated by intense yuzu aroma — think tart lemon meets fragrant floral citrus zest. On the palate, a lively interplay of tart acidity and gentle sweetness creates a refreshing mouthfeel, reminiscent of lemonade with deeper citrus complexity. The sake base adds subtle rice-derived umami and smoothness, tempering the bold fruit character. Mid-palate notes include honeyed citrus and a hint of bitter pith that balances the sweetness. The finish is clean and invigorating with a lingering citrus zest brightness. Overall, this sake-based yuzu drink is crisp, expressive, and perfect for citrus lovers.

The Estate

Heiwa Shuzou’s Tsuru Ume Yuzu expression is part of a range celebrating the citrus and plum heritage of Wakayama, integrating local produce into artisanal sake offerings. The brewery has a long tradition of blending sake with fruit, emphasizing purity, freshness, and regional character.

Production Process

Made by incorporating natural yuzu juice and peel into a sake base, this yuzushu uses fruit sourced from Wakayama’s renowned citrus regions. The ratio of sake to yuzu is generous, giving the beverage pronounced citrus aromatics and flavor. Fermentation and blending emphasize freshness and balance between sweetness and acidity.

Serving Suggestions

Serve chilled in a wine or tulip glass to showcase aromatic yuzu notes. It’s refreshing on ice or paired with tonic or sparkling water for a citrusy spritz. Excellent with grilled fish, tempura, or fresh salads with citrus vinaigrette.
