This vibrant fruit sake greets the nose with bright citrus aromas — juicy summer orange and zesty lemon — supported by soft sake undertones. The Estate

Heiwa Shuzou’s Tsuru Ume series showcases sake expressions inspired by the rich natural bounty of Wakayama Prefecture, where fruit and rice flourish together. The brand blends traditional sake brewing with fruit infusions that embrace Japanese seasonal flavors and artisanal craftsmanship.

Production Process

This release begins with a junmai sake base, to which locally grown Wakayama Natsu Mikan, Amanatsu, and lemons are added, pressed with their skins to integrate vibrant citrus oils and bitters. The fruit and sake ferment together gently, retaining freshness and bright aromatics. Its low ABV and fruit-first profile position it between a fruit sake and a refreshing aperitif.

Serving Suggestions

Serve well-chilled in a wine glass or tall flute to highlight the citrus aromatics. It’s delightful on its own as a summer sipper, or with light sparkling water or soda for a refreshing highball-style drink.
