Overall the flavors are citrusy and minerally with lemon grass, lemon/lime, green apple skins, and light stone fruits. Some very unique flavors pop-up such as celery and dried mint to go along with the volcanic minerality and salty acidity.

Aging in all stainless steel with three months of bâtonnage gives this wine a great balance of crispness with a touch of weight to the texture.
