The Estate

Kaiken was founded in 2002 by Chilean winemaker Aurelio Montes, who crossed the Andes to explore Argentina’s exceptional terroir. The Indómito line represents a bold and modern expression of Mendoza Malbec, crafted to highlight the power and vibrancy of high-altitude vineyards. The winery’s philosophy focuses on combining precision winemaking with respect for the natural character of the fruit.

Wine Making

Grapes are sourced from Mendoza vineyards located at elevated altitudes, where warm days and cool nights encourage balanced ripening. Fermentation takes place in stainless steel tanks with controlled temperatures to preserve varietal expression. The wine sees partial aging in oak barrels to enhance structure and complexity. The overall style emphasizes fruit purity, richness, and accessibility.

Food Suggestions

Pairs well with grilled steak, roasted vegetables, or barbecue dishes. It also complements hearty pasta, empanadas, and aged cheeses, making it a versatile option for a wide range of menus.
