SUPPAI means sour. Tsuru-ume SUPPAI is umeshu based on sake. Wakayama prefecture is the plum heartland of Japan. This brew has used three times more plums than what is used in a typical umeshu. The particular plum used here is called Nankobai. Its skin is soft and the fruit itself is thick and juicy;
