“KOI” is vivid and expressive right from the nose, offering scents of tropical fruits (pear, melon, white peach), with steamy rice and subtle floral or mineral touches. On the palate it is richly layered and full due to its genshu (undiluted) nature—fruit sweetness is more pronounced, but balanced with umami, nutty notes (cashew, wheat), cacao or dark chocolate hints, and a crisp, lively finish. There is also a clean mineral backbone, and subtle roasted/grainy undertones that add depth and distinction. The overall experience is elegant, powerful, and complex.
Brewed by Imayo Tsukasa in Niigata prefecture, which is well regarded for its pure water, quality sake rice, and traditional brewing practices.
Produced Junmai Daiginjo style, genshu, meaning no dilution after fermentation, giving it higher alcohol and more concentrated flavor.
Pairs well with sashimi, shellfish (oysters, scallops), and sushi—especially when the seafood is fresh and clean-flavored. The sake’s richness paired with its full body can also stand up to slightly richer proteins such as wagyu beef, foie gras, or aged cheeses.
