Tokubetsu (meaning: special) has an undeniable complexity. Pear and honeydew dance on the palate, mellow, but with and a clean, crisp and incredibly smooth finish. The Omachi rice, the oldest sake rice variety grown in Japan, is hard to grow but creates elegant and age-worthy sake.
