Hildegard has a texture, complexity, and distinctiveness that cannot be found in a single white wine varietal. The 2020 is rich yet zesty, starting with aromas of lemon, baked apricot, cream and toast on the nose. The palate is layered in hazelnut, lemon confit and unabashed oak flavors, proving creamy in texture yet blasted with persistent acidity.
We started making Hildegard in 1998. The Pinot Gris planted next to the winery (Block 12 of Bien Nacido Vineyard) was amazing. The yields were small and the grapes were intense. The wine made from this Pinot Gris was more like a Burgundian Pinot Gris or dry Alsatian Pinot Gris than a light, insipid Pinot Grigio style.
A wine named after an Empress has to be exquisite. This distinctive blend of Pinot Gris, Pinot Blanc and Aligoté is barrel fermented and gets the best of everything including extra barrel and bottle time. The barrels for this program are all new Francois Frères french oak.
Pairs well with pasta, pork, shellfish, and poultry dishes.
