Each of the varietals in the blend offers up their unique flavors to combine a refreshing and crisp wine with “high resolution” of flavors. The Cinsault gives the red fruits, and gentle floral aromas. The Grenache supplies the crisp mineral flavors with a hint of citrus in the lingering finish.
It was in Latour de France that he chose to set up his domain. Occultum Lapidem is the first expression of this terroir. Then there followed 6 years of reflexion, observation and analysis to produce a precious, rare wine: v.i.t. The story continued near a little village called Lesquerde. Steep, craggy limestone, arid soil, battered by the tramontane wind… A wine wriggled free from the grasp of nature: L’esquerda. Eventually, Single Vineyard Selections r.i. and Chrysopée were able to reveal new nuances of this oh-so-precious terroir.
He searched and found a fantastic source of Cinsault in the Gard district, and used that variety blended with Grenache. The grapes are carefully vinified at low, even temperatures. The juice is fermented in temperature-controlled, stainless-steel tanks and aged in those tanks. After a short maceration on the skins, the delicate pink hue is attained, and the wine is racked and vinified. The wine is then carefully blended prior to bottling.
