In ancient times the territory belonged to the Giudicato of Cagliari and to the curatorie (these were the main administrative, electoral, fiscal and judicial division of the kingdoms of Sardinian Giudicato between the 9th and 15th centuries) of Sarrabus, Colostrai and Gerrei.
Harvested at the end of September. Soft pressing, fermentation for 10 days at controlled temperature. Aged in concrete tanks or stainless steel tanks.
