On the nose it is rich and aromatic with white flowers and pears. Crisp with notes of green apple, banana, and citrus fruit that enhance the pure Chardonnay varietal character. It has sparkling clarity and a dry finish that lingers on the palate.
Located in the heart of the Languedoc-Roussillon, in the South of France, Domaine de Cabrials lies on chalk and clay terraces to the west of Beziers. Cabrials’ present mansion was built in the 19th century on the site of a medieval chateau. Its large vineyard is farmed by Bernard Julien. The domaine has a beautiful 19th century cellar with huge oak casks, today used for the ageing and storage of the wines. The vineyards cover about 80 hectares, with 60% planted with red grape varieties.
This is made from 100% Chardonnay that has been harvested at night, when the temperatures are cooler to deliver the fruit to the winery at the optimal temperature. The bunches are totally destalked and fermented at very cool temperatures in stainless steel tanks with CO2 to eliminate the possibility of oxidation. After a brief maceration on the skins which increases the complexity and enhances the structure of the wine, it is racked and allowed to undergo a slow fermentation under careful temperature control.
