Bright ruby-red color, it has a pleasant nose with beautiful notes of ripe black cherry and black currant and a hint of pepper. On the palate it is full, fresh, round, and elegant with beautiful balance and nice length.
Located in the heart of the Languedoc-Roussillon, in the South of France, Domaine de Cabrials lies on chalk and clay terraces to the west of Beziers. Cabrials’ present mansion was built in the 19th century on the site of a medieval chateau. Its large vineyard is farmed by Bernard Julien. The domaine has a beautiful 19th century cellar with huge oak casks, today used for the ageing and storage of the wines. The vineyards cover about 80 hectares, with 60% planted with red grape varieties.
This is made from 100% Pinot Noir that has been harvested at the peak of ripeness, when fully mature, to deliver the highest quality fruit to the winery. The bunches are totally destalked and macerated in stainless steel tanks for one week at a low temperature without fermentation, to extract color and aromas with a minimum of tannins. Fermentation begins and is carefully monitored and controlled with temperature. The free-run juice and press wines are kept separately and blended according to the vintage aromatics and gustatory expression. It is racked and vat aged until bottling.
Pairs well with beef, pasta, and veal.
