The palate reveals a beautiful balance of acidity and viscosity, plush and layered with an enticing interplay of Key lime and ripe stone fruit, driving lifted and long, finishing round yet bright with a whisper of sea air salinity.

Crafting our Estate Sauvignon Blanc involves a blend of fermentation techniques and vessels that add complexity and allow our winemakers a rich palette of flavors and textures. Our process begins with whole-cluster pressing of a portion of the Sauvignon Blanc and Semillon, complemented by additional Sauvignon Blanc that is destemmed and cold-soaked with skin contact.
Pairs well with seafood based dishes, a salad featuring goat cheese and citrus vinaigrette, grilled asparagus, butternaut squash risotto, potato leek soup, citrus-marinated chicken kebabs or pan-roasted petrale sole witth a lemon caper.
