One of the things that makes St. Pauls stand apart from the crowded field of Tyrolean winemakers is that its focus is on native grape varieties. Although it also grows delicious Chardonnay and Cabernet Sauvignon, St. Pauls is renowned for its bottlings of local red grapes like Schiava and Lagrein, varieties not forgotten but often overlooked by commercially minded winemakers there. Although not certified, organic farming practices are the norm for its growers.
