Our flagship Cabernet opens up with notes of blackberry, black cherry, licorice, and espresso bean. This full bodied wine has a powerfully structured periphery showcasing refined tannins that frame a dense juicy core. Robust and elegant at once, this wine embodies the delicate balance of finesse and opulence. As it opens, spearmint and dark chocolate appear. Very lightly fined and bottled unfiltered, this Cabernet is a true expression of our Dr. Crane Vineyard site.

The Estate

Nestled in famous Napa Valley, our family has been growing winegrapes on our historic St. Helena vineyard since 1932. Originally planted in 1860 by Dr. George Crane, three generations of the Salvestrin Family have meticulously and sustainably farmed this 26 acre vineyard for 81 harvests. Being sensitive to the environment and the surrounding community by following organic guidelines, we consistently create handcrafted wines that are fruit forward, elegant, balanced and memorably world class.

Wine Making

Once the fermentations are dry, they are gently drained and pressed off. The free run portion and press are kept separate and barreled down into oak barrels via gravity. The wines age for over a year before blended. After blending, the Estate Cabernet ages for a total of 22 months.

Food Suggestions

Pairs well with beef, lamb, deer, venison, mature and hard cheese. and poultry dishes.
