Meticulisuly layered, aromas of plum, brambly fruit, fresh tobacco leaf, and a hint of clove are featured. The palate boasts fine grained, chalky tannins that surround a silky voluptuous middle. Seamless and mouth-coating, wild raspberry and black olive reveal themselves on the back end end of the lingering finish. Completely unadulterated, this Cab was bottled unrefined and unfiltered.
Nestled in famous Napa Valley, our family has been growing winegrapes on our historic St. Helena vineyard since 1932. Originally planted in 1860 by Dr. George Crane, three generations of the Salvestrin Family have meticulously and sustainably farmed this 26 acre vineyard for 81 harvests.
14 months into aging, our winemaking team tastes through every single new Cabernet Sauvignon barrel from the vintage and selects the very best barrels. These barrels are then blended and put back to the barrel for the final aging period before bottling. The total aging time is 34 months in 100% new French oak.
Pairs well with beef, deer, venison, lamb, and poultry dishes.
