Shibata Shuzo is the signature sake label of Shibata Brewery Co., Ltd., a venerable Japanese sake producer founded in 1830 during the late Edo period in what is now Okazaki City, Aichi Prefecture. For nearly two centuries and eight generations, the Shibata family has upheld traditional sake brewing methods, blending time-honored craftsmanship with the purity of their natural environment.
The brewery’s philosophy centers on respect for terroir, water, and seasonality. It draws from exceptionally soft spring water called “Kanzui” (literally “God’s water”), sourced from the mountains behind the brewery — water so gentle it influences every stage of production, from washing rice to fermentation, contributing to sake that is smooth, balanced, and harmonious.
Under the leadership of the current 8th-generation head and feminine Toji (brewery master) Shizuka Ito — one of the relatively few women in Japan’s sake brewing world — Shibata Shuzo continues to produce a range of expressions that reflect both heritage and innovation.
Shibata’s portfolio includes classic Junmai Ginjo styles made from rare rice varieties like Ginpu from Hokkaido, resulting in clean, aromatic sakes with refined texture and mild finishes. The house also crafts creative flavored offerings such as yuzu-infused sake, blending bright citrus character with a well-balanced base Junmai for a refreshingly modern twist.
